a so, so good chickpea salad

I’ve made this chickpea salad last night and it was A) so, so good and B) it took about 10 minutes. So trust me on this one and take this shopping list with you when you’re headed to your local market this afternoon or the grocery store after work.

cilantro lime chickpea salad

Chickpea, lime and cilantro salad (I’ve made some small changes to the original recipe)

Yield 1 – 2 servings (so double it when you’re a family of 4)

- 1 regular can of chickpeas, drained and rinsed
- 2 cups of fresh spinach
- 1 small sweet onion
- juice from 1/2 lime
- fresh cilantro
- 2 tsp of Dijon mustard
- 1 small garlic glove
- 1/2 tsp of ground cumin
- 1tsp of extra virgin olive oil
and some salt and ground pepper

Directions

Put the spinach in a food processor and pulse a few times until chopped very small and put in a bowl. Add the drained chickpeas and the chopped onion. Next in the food processor (no need to rinse the bowl!) add the lime juice, cilantro, mustard, garlic, cumin and olive oil. Process until smooth. Pour the dressing on top of the spinach/chickpea mixture and stir well. Add salt and pepper to taste and voila that’s it. We had some koftes to go with the salad that were bought at our local Turkish butcher, but if you like to make you’re own this is a great recipe too. Bon Appetit!

PS: Ik ben nog een beetje aan het zoeken met mijn blog wat betreft het schrijven in het Engels of Nederlands/Engels. Is er een voorkeur? Leest Engels prima weg of heeft ook in het Nederlands toch de voorkeur? Als je er ideeën over hebt, hoor ik deze natuurlijk graag, Bianca.
